HARVEST TIME !

Our garden did so well this year. I was able to put up relish, green beans, dilly beans, and pickled beets. The kids enjoyed gardening with me this year, especially the little ones.

Delightful Blueberry Oatmeal Cookies

2 sticks softened butter
3/4 cup of granulated sugar
1 cup of packed brown sugar
2 eggs
1 1/2 tablespoons of pure vanilla
2 1/2 cups of flour
2 1/2 cups of quick oats
1 teaspoon of baking soda
1 teaspoon of salt
2 cups of carmel bits ( I found mine at super Walmart)
1 1/2 cups of dried blueberries
1 cup of white chocolate chips

1. Preheat oven to 350 degrees. In a stand mixer, beat the butter and the sugars until light and fluffy. Beat in the eggs and vanilla until well combined.

2. Place flour, oatmeal, baking soda and salt into a large bowl; mix to combine. Add dry ingredients to the wet, along with the carmel bits, dried blueberrisand white chocolate. Mix until just combined.

3. Use a medium cookie scoop and scoop dough onto a parchment lined baking sheet. Bake for 9-11 minutes or until the edges are golden brown.

4. Makes about 3 dozen cookies.

COOKIES

Yesterday evening was nice and cool, so we decided to bake cookies. We made about 5 dozen oatmeal, blueberry, white chocolate chip cookies, and about 2 dozen oatmeal chocolate chip. While the oven was on, I put in a double batch of brownies as well. The house smelled divine.

Wendell cooks on Friday nights, so on the menu for tonight " Red Hotdogs" and potato salad. The boys will LOVE it, the girls not so much.

Cleaned the refrigerator today, I bleached it all out. I am trying to do one big chore each day, so I can have my house all put together come the end of August, just in time for school to start again. Tomorrow's project is the back pantry.

Hummingbird Moth

This evening the kids and I found a Hummingbird Moth in the garden. We watched it right before our eyes grow wings! It was in it's final stage of becoming a moth. Metamorphosis is truly amazing. We were all in awe of just how big this moth really is. I had never seen one; although we have seen plenty of tomato horn worms over the years.

It was a crazy week. Kolbe tripped, hit the couch, and had to go to the emergency room. (Seven stiches later; we were both glad to be back home.)

Samuel turned 7 years old. He was so excited. He went to the movies with his brothers and Dad, and they went and flew his new remote control airplane. We ended the party with cake, pinata, and lots of fun.

STRAWBERRY PICKING AND YARD SALES

There is nothing quite like the smell of a strawberry field in the summertime. I took two of my girls strawberry picking today, Chantelle and Hannah. The heat of the day brought out the aroma of the berries, it was amazing. We also stopped at a yard sale, and bought a great lemonade pitcher.

June in New Hampshire

The Nina and Pinta ships came to Portsmouth this past week. It was great to be able to view the ships. Can you imagine living on one of these for months on end?

Wendell also took the kids to the Albacore Submarine.The boys had a blast.............

We went down to the beach, Hampton, this week. I bought a great piece of tapestry, I think I am going to go back and get another one. I want to make my bedroom curtains from it. I love the color, goldenrod.
We are finally done homeschool for the summer.   We all are in need of a well deserved break.   The kids worked really hard this past year, and I am so proud of them all. 

I love the freedom that summer gives my family..........

One of my friends gave me 4 dozen eggs yesterday, so I turned them into our breakfast this morning!  :)  I made a couple quiche, and used a bunch of my garden greens.   They turned out fantastic.
